Protein Packed Pancakes
As you know, breakfast is the most important meal of the day. These protein pancakes are a delicous and nutritous way to jump start your mornings.
You will need:
- your fav pancake mix( or make from scratch) i use wheat pancake mix
- water( if you use the mix)
- 1 scoop of your fav protein
- frozen blueberries (1/4 cup)
-frozen strawberries ( 4-6 small ones)
- water ( 2oz)
- brown sugar ( 3 tbsp)
1 tsp of corn starch ( optional)
In a small pot, boil water then add frozen fruit and brown sugar reduce heat and let cook for 5 mins. add 1 tsp of corn starch to thicken the syrup. You can remove the fruit and strain the syrup to get of clumps from the cornstarch if you want to.
Mix pancake batter, and add in the scoop of protein powder and in a lightly greased pan cook the pancakes.
Plate your pancakes and top with the fruit and syrup and enjoy- you can add fresh bananas and granola to the top if you desire.
